Daily Activity 5 (ENG)



February 26, 2018, at the Kitchen Laboratory at Makassar Tourism Polytechnic. I made a Chicken Salad Hawaian which is an Appetizer for open resto the next day, My arrival this morning to campus at 07.10 am accompanied by heavy rain. Exactly at 08.00 am check completeness done by 3 Supervasior that are Senior Semester 4 from Food Production Management. After checking, I keep the bag in the looker and then standing one line (standing on one medium-sized floor). Then we prepared the ingredients and tools of Chicken Salad Hawaian.

The following ingredients and process of making seasoning Chicken Salad Hawaian:

Ingredients :

  • Chicken breast
  • Pineapple (Cube)
  • Cream Cheese (Cube)
  • Onion (Cube)
  • French Dressing
  • French Bread
  • Salt
  • Papper Corn


Steps:

  1. Prepare Frech Dressing Materials and Tools (Apple Cider Vinegar, Olive Oil, Mustard, Papper, Salt, Garlic). Then mix the ingredients while stirring then enter the Garlic at the end of the making.

  2. Prepare Chicken Breast for seasoning
  3. Prepare Chicken Spices
  4. Trim Chicken Breast View by separating Tenderloin and Fat
  5. Sprinkle spices that have been prepared
  6. Stir chicken that has been sprinkled with spices so that the marinade seeps.
  7. Provide Plastic and put in chicken, lemon slices, and butter.
  8. Wrap in a state without air. Then save it in Chiller.

Afterwards, I cut the Onion Cube and Cream Cheese and then put it into Chiller.

After that I helped the other section prepare the material ingredients, be it section Main Course, Soup, or Dessert. I also noticed some cooking processes performed by Chef Dyno and Supervasior. After that we are one line for the section division for the day after tomorrow, I got the Dessert section. then we did General Cleaning at 04.45 pm. After all, standing one line then go home at 6:45 pm.
